Ingredients
- 600 g Type 0 flour (sifted; additional flour for the work surface, quantity unspecified)
- 400 g Water (to be added gradually; a small additional amount is required for the final mixture with oil, quantity unspecified)
- 7 g Dry yeast
- 16 g Fine salt
- 30 g Extra-virgin olive oil (for the dough; additional unmeasured oil for greasing the bowl and baking pan, oiling your hands, and the finishing mixture)
- Coarse salt (as needed, for the surface)
Steps
- 1
Sift the flour into a large bowl. Add the water gradually, add the dry yeast, and continue incorporating the water. Knead for a few minutes, as shown in the video.
- 2
Add the fine salt and extra-virgin olive oil. Mix and let the dough rest as it is for 20 minutes.
- 3
On a lightly floured work surface, perform one round of stretch-and-folds and let the dough rest for 10 minutes. Repeat the round of folds, with the resting interval, for a total of 3 or 4 times.
- 4
Shape the dough into a ball; it should be smooth and should already have begun to rise. Place it in an oiled bowl and cover tightly with plastic wrap.
- 5
Let it rise for 3 hours in the turned-off oven, with a small saucepan of water beside it.
- 6
Transfer the risen dough to a baking pan brushed with extra-virgin olive oil and stretch it out. Cover with plastic wrap.
- 7
Let it rest for another hour in the turned-off oven, again with a small saucepan of hot water beside it.
- 8
With oiled hands, stretch the dough using your fingertips. Mix more extra-virgin olive oil with water and fine salt, using only a little water compared with the oil, then pour the mixture over the surface.
- 9
Sprinkle the coarse salt over the surface.
- 10
Bake in a preheated conventional oven at 250 °C for 15–20 minutes. If the oven is very powerful, you can set it to 230 °C on the conventional setting.
Notes
The amount of oil and water for greasing and for the finishing mixture is not specified. The flour for the work surface and the oil for the bowl, baking pan, and hands are mentioned in the method, but without quantities. The video describes the focaccia as golden and crispy on the outside and soft on the inside; it does not specify the size of the baking pan.
