Ingredients

  • 4 sheets Yukfa, thick filo pastry sheets (1 pack; intended for börek. Handle carefully because the sheets can break easily.)
  • 1 lb Ground beef
  • 2 Tomatoes (Use in the blended meat mixture.)
  • 0.5 Red bell pepper
  • 0.5 Yellow bell pepper
  • 0.5 Yellow onion
  • 1 Jalapeño
  • 3 cloves Garlic (Use 3–4 cloves.)
  • 0.333 cup Parsley (Chopped; for the meat mixture.)
  • Salt (To taste.)
  • 1 tbsp Paprika
  • 1 tbsp Black pepper
  • 1 tbsp Red chili flakes
  • 0.5 cup Oil (For the meat mixture.)
  • 2 tbsp Tomato paste (Add to the meat mixture.)
  • 1 cup Water (For the glaze.)
  • 0.5 cup Oil (For the glaze spread between the dough.)
  • 2 tbsp All-purpose flour (For the glaze.)
  • Onion (Sliced, for garnish.)
  • Tomatoes (Diced, for garnish.)
  • 1 lemon Lemon juice (For serving.)
  • 1 tsp Sumac (For garnish.)
  • Parsley (For garnish.)

Steps

  1. 1

Add the onion, tomatoes, bell peppers, garlic, and jalapeño to a food processor. Blend until the vegetables form a paste.

  2. 2

Place the ground beef in a mixing bowl. Add the prepared vegetable paste, tomato paste, and chopped parsley.

  3. 3

Add the salt, black pepper, paprika, and red chili flakes. Mix thoroughly until the meat mixture is evenly combined.

  4. 4

    Preheat the oven to 420°F.

  5. 5

In a separate bowl, mix the water, oil, and all-purpose flour to make the glaze.

  6. 6

Line a baking sheet with parchment paper. Carefully place one sheet of yukfa on the sheet, taking care not to tear it.

  7. 7

Spread the flour glaze evenly over the pastry sheet with a brush.

  8. 8

Place a second sheet of yukfa on top of the glazed sheet.

  9. 9

Brush the second sheet evenly with the flour glaze, then spread a thin layer of the meat mixture over the top.

  10. 10

Bake for 18–20 minutes, or until the meat is cooked and the crust is golden and crispy.

  11. 11

Serve warm with sliced onion, diced tomato, parsley, lemon juice, and sumac.

Notes

The source lists a 4-sheet pack of yukfa but the method explicitly describes using one sheet, then a second sheet, for the preparation. It does not specify whether the remaining sheets are used for additional batches or layered into the same batch.
