Ingredients

  • 0.25 cup warm water (100°F to 110°F / 38°C to 43°C)
  • 2.25 tsp instant dry yeast (1 packet)
  • 3.25 cup all-purpose flour (420 grams)
  • 0.25 cup granulated sugar
  • 1.5 tsp salt
  • 1 cup unsweetened coconut milk (from a can, mixed well before measuring)
  • 4 tbsp unsalted butter (softened, divided)

    In the bowl of a stand mixer, or in a large mixing bowl if making by hand, combine the flour, instant yeast, salt, and sugar.

    Add the warm water and coconut milk to the flour mixture and stir to combine.

    Mix in 2 tablespoons of the softened unsalted butter until a shaggy dough forms.

    If using a stand mixer: Mix until incorporated, then switch to the dough hook and knead on low speed for 7 to 8 minutes. If kneading by hand: Knead on a lightly floured surface for 8 to 10 minutes until the dough is smooth and slightly sticky.

    Shape the dough into a ball and place it in a greased bowl. Cover and let it proof in a warm spot until it has nearly doubled in size, about 1 to 1 1/2 hours.

    Turn the dough out onto a lightly floured surface and divide it into 8 equal pieces.

    Roll each piece into a circle approximately 6 inches in diameter.

    Spread some of the remaining softened butter on one half of each dough circle, then fold it in half to create a half-moon shape.

    Place the folded pieces on a lined baking sheet, cover, and let rise for 30-40 minutes.

    Meanwhile, preheat the oven to 350°F (175°C).

    Bake for 17-20 minutes, until the tops are golden.

    Remove from the oven and immediately brush the warm coco bread with the remaining butter for a shiny finish.

Notes

If using active dry yeast instead of instant, whisk it into the warm water first and let it sit for 5-10 minutes until foamy before adding to the flour. For a sturdier bread, you can substitute bread flour for all-purpose. Shaped dough can be refrigerated overnight before baking, and baked bread freezes well.
