Ingredients
- 1.75 cup roasted and mashed sweet potato (Roast and mash before using.)
- 0.5 cup unsalted butter (For browning.)
- 1.75 cup all-purpose flour
- 2 tsp pumpkin pie spice
- 2 tsp baking powder
- 0.5 tsp baking soda
- 0.5 tsp kosher salt
- 0.75 cup light brown sugar (Packed.)
- 0.5 cup granulated sugar
- 2 large eggs
- 1 tbsp bourbon (Optional.)
- 2 tsp pure vanilla extract
Steps
- 1
Preheat the oven to 375°F (190°C). Grease a 12-cup muffin pan or line it with paper liners, then set the pan aside.
- 2
Place the butter in a small saucepan over medium heat and melt it. Continue cooking, swirling the pan occasionally, until the butter turns golden brown and small brown bits form on the bottom, about 3–5 minutes. It should smell nutty. Remove the saucepan from the heat and let the browned butter cool slightly.
- 3
In a medium bowl, whisk together the all-purpose flour, pumpkin pie spice, baking powder, baking soda, and kosher salt.
- 4
In a separate, larger bowl, whisk the roasted mashed sweet potato and slightly cooled browned butter together until smooth.
- 5
Add the light brown sugar and granulated sugar to the sweet potato mixture. Whisk until thoroughly combined and glossy.
- 6
Add the eggs, bourbon if using, and vanilla extract. Whisk until the wet ingredients are well mixed.
- 7
Add the dry ingredients to the wet ingredients. Fold gently just until combined and no flour streaks remain; do not overmix.
- 8
Scoop approximately ¼ cup of batter into each muffin cup, filling each about three-quarters full.
- 9
Bake for 20–25 minutes, until the muffin tops are set and a toothpick inserted into the center comes out with a few moist crumbs.
- 10
Cool the muffins in the pan for 10 minutes, then remove them from the pan.
Notes
The recipe requires roasted sweet potato. The source recommends roasting scrubbed, fork-pricked sweet potatoes at 450°F until very tender, approximately 50–70 minutes, and preparing them ahead of time or using leftovers. Paper liners may stick slightly; a very light coating of cooking spray can help them peel away cleanly. The source also mentions that nuts or chocolate chips may be folded into the batter, but provides no quantity.
