Ingredients

  • 650 g Fresh pears (Keep the skins; remove the cores. Makes 650 g pear purée.)
  • 200 g Water
  • 50 g White miso (shiro miso) (Taste and adjust; add more for the savory variation if desired.)
  • 100 g Sugar

Steps

  1. 1

Cut the pears into chunks, remove the cores, and keep the skins on for extra flavor.

  2. 2

Put the pear chunks in a saucepan over medium-low heat. Cook gently, stirring occasionally, until completely soft; the source does not specify a cooking time.

  3. 3

Blend the cooked pears until smooth, then weigh out 650 g of pear purée.

  4. 4

Add the water, sugar, and white miso to the purée. Blend until fully combined, then taste and adjust the miso as desired.

  5. 5

Leave the mixture to cool, then refrigerate for a few hours until thoroughly chilled.

  6. 6

Blend the chilled mixture again, then churn it in an ice-cream maker.

  7. 7

Freeze for 2–3 hours before serving.

  8. 8

If the sorbet has been frozen for longer, leave it at room temperature for 15–20 minutes before scooping.

Notes

For a savory version, add a little more miso; the source suggests serving it with crispy chicken croquettes, roasted pork, or aged Comté. The source does not specify how long to cook the pears or how long to chill the mixture beyond “a few hours.”
