Ingredients
- 0.5 cup salted butter (Melted and cooled)
- 0.5 cup light brown sugar
- 0.333 cup granulated sugar
- 1 large egg (Room temperature)
- 1 tbsp vanilla extract
- 1.25 cups all-purpose flour (Spooned and leveled)
- 0.5 tsp baking soda
- 1 cup semi-sweet chocolate chips
- 9 tbsp chocolate spread (Frozen for at least 30 minutes)
- parchment paper (For lining the baking sheet)
Steps
- 1
Freeze the chocolate spread for at least 30 minutes so it is firm and easier to handle.
- 2
Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
- 3
In a bowl, mix the all-purpose flour and baking soda. Set the dry mixture aside.
- 4
In a separate bowl, combine the melted, cooled salted butter, light brown sugar, and granulated sugar. Whisk for 1–2 minutes, until the mixture turns into a paste.
- 5
Add the room-temperature egg and vanilla extract to the butter-and-sugar mixture. Mix until combined.
- 6
Add the dry ingredients to the wet batter. Gently fold until just combined; do not overmix.
- 7
Add the semi-sweet chocolate chips and mix them in with a spatula. Do not overmix.
- 8
Scoop the dough into 9 portions and flatten each portion into a disk.
- 9
Place 1 frozen tablespoon of chocolate spread in the center of each dough disk. Fold the dough over the filling and seal the edges completely.
- 10
Arrange the stuffed cookies on the prepared baking sheet, leaving space between them for spreading.
- 11
Bake for 12–14 minutes, until the edges are golden and crispy while the centers remain gooey.
- 12
Let the cookies cool slightly before serving. Avoid overbaking because they will continue cooking slightly after they are removed from the oven.
Notes
The source states a yield of 9–10 cookies, while the method specifies dividing the dough into 9 portions. Freeze the chocolate spread for at least 30 minutes before assembling. Do not overbake; the cookies continue to cook slightly after removal and should retain a gooey center.
