Ingredients

  • Bacon (Rendered into bacon bits; reserve the rendered fat for scrambling the eggs.)
  • Bacon fat (Used to scramble the eggs; obtained by rendering the bacon.)
  • Eggs (Some eggs are scrambled slightly undercooked for the filling; additional eggs are scrambled on a plate for dipping the rice paper.)
  • Rice paper wrappers (Use three overlapping wrappers for a full-size version, or individual wrappers for the mini spirals shown here.)
  • Cheddar cheese (Added both beneath and over the egg filling.)
  • Everything bagel spice (Sprinkled over the assembled spirals before air frying; the source mentions homemade spice blend.)

Steps

  1. 1

Render the bacon in a skillet until the pieces are cooked and crisp. Remove the bacon bits and reserve the rendered bacon fat in the skillet.

  2. 2

Use the bacon fat to scramble some of the eggs, cooking them only until slightly undercooked because they will continue cooking in the air fryer. Set the bacon bits and eggs aside.

  3. 3

Scramble additional eggs on a plate for dipping the rice paper wrappers.

  4. 4

Dip a rice paper wrapper into the scrambled egg on both sides, then remove any excess egg.

  5. 5

Place cheddar cheese on the dipped rice paper. Add some of the slightly undercooked scrambled egg, sprinkle with bacon bits, and add a little more cheddar cheese.

  6. 6

Roll the filled rice paper tightly. Do not fold in the sides; curl them up into the roll as you shape it into a compact package. The end piece should seal the roll.

  7. 7

Repeat with the remaining ingredients to make mini bagel spirals.

  8. 8

Sprinkle the assembled spirals with everything bagel spice.

  9. 9

Air fry at 370°F for 10 minutes, without flipping, until the spirals are golden brown and crispy.

Notes

The source does not provide ingredient quantities, so amounts must be adjusted to the desired number of mini spirals. The eggs should be slightly undercooked before filling because they cook further in the air fryer. The source says the mini spirals do not need to be flipped because of their small size.
