Weights are estimates. Together, the ingredients weigh about 665 g before cooking, which is about 75 g per serving.

Steps

  1. Melt the butter on the stovetop until it turns brown and becomes noticeably fragrant. Be careful not to burn the butter.

  2. Remove the browned butter from the heat and let it cool slightly.

  3. Add the brown sugar and white sugar to the butter.

  4. Add the egg and mix it into the mixture.

  5. Add the flour, using 2-3 Turkish tea glasses depending on the consistency. Add a very small amount of baking powder, using just the tip of a tsp, along with the cornstarch. Add a pinch of salt if desired.

  6. Add the chocolate and distribute it throughout the dough. The source states that 2-3 packages of any desired chocolate may be used and that dark chocolate melts well.

  7. Chill the dough in the refrigerator for 1-2 hours before shaping or baking.

  8. Divide the dough into 9 portions and shape the cookies.

  9. Bake the cookies at 180°C (350 °F) for 10-15 minutes. Since the baking time may vary depending on the oven, check them and remove them when done; they should be soft when they come out of the oven. Do not think they are underbaked—they will firm up as they cool.

Notes

The amount of flour is 2-3 Turkish tea glasses, depending on the consistency of the dough. The package weights of the chocolate are not specified in the source. The cookies are expected to be soft when they come out of the oven; they will firm up as they cool.
