Ingredients
- 0.5 cup dry red lentils (soaked for at least 3 hours or overnight, then drained)
- 0.5 cup water
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 0.25 tsp salt
- 0.25 cup pizza sauce (sugar-free preferred)
- 0.25 cup vegan mozzarella cheese (shredded)
- 2 tbsp nutritional yeast (for extra protein and cheesy flavor)
- vegetable toppings (such as bell peppers, onions, or mushrooms)
Steps
- 1
Place 0.5 cup of dry red lentils in a bowl, cover with water, and soak for at least 3 hours or overnight.
- 2
Drain and rinse the soaked lentils thoroughly.
- 3
Preheat your oven to 400°F (200°C) and line a baking sheet or pizza stone with parchment paper.
- 4
Add the drained lentils, 0.5 cup of fresh water, garlic powder, onion powder, dried oregano, and salt into a high-speed blender.
- 5
Blend on high until the mixture is completely smooth and resembles a thick pancake batter.
- 6
Pour the batter onto the prepared parchment paper and spread it out into a thin, even circle using the back of a spoon.
- 7
Bake the crust for 10-12 minutes until the edges are golden brown and the center is firm to the touch.
- 8
Remove the crust from the oven and carefully flip it over.
- 9
Spread the pizza sauce evenly over the crust, then top with vegan mozzarella, nutritional yeast, and your choice of vegetable toppings.
- 10
Return the pizza to the oven and bake for an additional 8-10 minutes until the cheese is melted and the toppings are cooked.
- 11
Let the pizza cool for a few minutes before slicing to allow the crust to set.
Notes
For a crispier crust, ensure the batter is spread thinly. You can also pan-fry the crust like a large pancake before adding toppings and finishing in the oven. Total protein count varies based on specific brands of vegan cheese and nutritional yeast used.
