Ingredients
- 50 g Pitted dates
- 2 tbsp Milk or water (For blending the dates; the source allows either milk or water.)
- 0.5 tsp Vanilla extract
- Salt (A pinch, optional.)
- 2 Weetabix
- 120 ml Milk (For mixing with the Weetabix.)
- 1 Small banana (Peeled and sliced.)
- 2 heaped tbsp Greek yoghurt (Thick; the source recommends Fage Greek yoghurt.)
- 5 g Dark chocolate (Grated.)
Steps
- 1
Soak the pitted dates in boiling water for 15 minutes to soften them. Drain the dates and discard the soaking water.
- 2
Put the softened dates, 2 tablespoons milk or water, vanilla extract, and optional pinch of salt in a blender. Blend until smooth, adding more liquid only if needed.
- 3
Crush the Weetabix into a container. Pour in the 120 ml milk.
- 4
Use a fork to continue crushing the Weetabix while mixing in the milk until the mixture is mashed and combined. Press it down into an even layer.
- 5
Spoon the date mixture over the Weetabix and smooth it into an even layer.
- 6
Arrange the banana slices in a layer over the date mixture.
- 7
Add a layer of Greek yoghurt and smooth it with the back of a spoon.
- 8
Grate the dark chocolate over the yoghurt.
- 9
Cover the container with a lid and refrigerate overnight. Eat the next morning.
Notes
The source gives no exact amount for the extra liquid added to the date blend if needed. Refrigeration is specified as overnight; the source does not give a precise number of hours.
