Ingredients
- 1 block firm tofu (Pressed for 20 minutes and cut into thick strips.)
- 1 tbsp tahini
- 1.5 tbsp tamari
- 3 tsp lemon juice
- 0.5 tsp garlic powder
- 0.5 tsp onion powder
- 0.5 tsp paprika
- 1 tbsp nutritional yeast
- 1 tbsp cornstarch
- 4 burrito-sized tortillas (Regular or spinach tortillas will work.)
- 5 cup romaine lettuce (Chopped; the source gives a range of 4–6 cups, roughly 1 head.)
- 0.5 cup vegan parmesan (Optional.)
- 1 cup vegan Caesar dressing (Joyful Balance Vegan Caesar Dressing, or a store-bought vegan Caesar dressing of choice. Some is used for the salad and some for the wraps.)
- 1 recipe crispy chickpeas (Joyful Balance Crispy Air Fryer Chickpeas, or store-bought vegan croutons. The referenced chickpea recipe is not included in the source.)
Steps
- 1
Preheat the oven to 425°F (220°C).
- 2
In a small bowl, whisk together the tamari, lemon juice, garlic powder, paprika, onion powder, and tahini until combined.
- 3
Place the pressed tofu strips in a large bowl. Very gently toss them with the tamari mixture until every strip is coated.
- 4
In a separate small bowl, combine the nutritional yeast and cornstarch.
- 5
Sprinkle about half of the cornstarch mixture over the coated tofu and gently toss to coat. Add the remaining cornstarch mixture and gently toss again.
- 6
Line a baking tray with a silicone baking sheet or aluminum foil. Arrange the coated tofu strips on the prepared tray.
- 7
Bake the tofu for 15 minutes. Remove the tray from the oven, flip each tofu strip, and bake for another 12 minutes.
- 8
Toss the chopped romaine lettuce with the vegan parmesan, if using, and half of the vegan Caesar dressing.
- 9
If desired, warm the tortillas in the microwave for 15–30 seconds to make them more pliable and less likely to crack when rolled.
- 10
Lay out the tortillas. Add a scoop of the Caesar salad, a spoonful of extra dressing, a few baked tofu strips, and a handful of crispy chickpeas to each tortilla.
- 11
Fold the sides of each tortilla inward toward the center. Fold the edge closest to you up over the filling, then roll tightly to form a wrap.
Notes
For meal prep, store the components separately and assemble just before eating or the morning of. Once assembled, the wraps are best eaten the same day so the lettuce and chickpeas stay fresh and crisp. The source recommends making the crispy chickpeas immediately before assembly; they can be re-crisped in an air fryer for a few minutes if needed. Wrap finished wraps in foil for transport and refrigerate. The total time includes pressing the tofu, preparing the dressing, cooking the crispy chickpeas, and completing the wrap; store-bought substitutes can shorten the time.
