  • 1 cup tomatoes, diced (For the salad)
  • 1 cup cucumber, chopped (For the salad)
  • 0.25 cup red onion, diced (For the salad)
  • 1 tbsp lemon juice (For the salad)
  • 1 tbsp olive oil (For the salad)
  • salt and pepper (To taste; for the salad)
  • 1 tbsp fresh coriander, chopped (For the salad)
  • 0.5 cup feta cheese (Optional; for the salad)
  • 0.5 cup mayonnaise (For the spicy sauce)
  • 2 tbsp jalapeños, chopped (For the spicy sauce)
  • 1 tbsp Sambal oelek sauce (Alternatively, use any chili sauce plus 1/2 tbsp red chili flakes)
  • 1 tbsp fresh garlic, finely minced (For the spicy sauce)
  • salt (To taste; for the spicy sauce)
  • 1 tbsp black pepper (For the spicy sauce)
  • 1 tbsp lemon juice (For the spicy sauce)

Steps

  1. 1

Place the bell peppers, the kofta portion of chopped coriander, garlic, red onion, and 1 teaspoon olive oil in a mini food processor. Blitz until they form a paste.

  2. 2

Remove excess water from the vegetable paste by squeezing it in a cloth or by hand.

  3. 3

Place the ground chicken thighs in a bowl and add the vegetable paste.

  4. 4

Add the salt, ground cumin, tomato paste, red chili flakes, and red chili powder. Mix well until evenly combined.

  5. 5

Using wet hands, shape the chicken mixture into kebabs of the desired shape, spreading each portion to an even thickness.

  6. 6

Cook the kebabs on a grill, in a heavy-based skillet, or on a griddle for about 4–5 minutes on each side.

  7. 7

Combine the diced tomatoes, chopped cucumber, diced red onion, lemon juice, olive oil, salt and pepper, chopped coriander, and optional feta to make the salad.

  8. 8

Stir together the mayonnaise, chopped jalapeños, Sambal oelek, minced garlic, salt, black pepper, and lemon juice to make the spicy sauce. If substituting another chili sauce, add 1/2 tablespoon red chili flakes as specified.

  9. 9

Serve the cooked kebabs with the salad, spicy sauce, and flatbread of choice, such as mini naan.

Notes

The source does not specify an exact kebab shape, grill or skillet temperature, or a target internal temperature. Cook until the chicken is fully cooked through. Flatbread quantity is not specified.
