Ingredients

  • High-starch potatoes (Agria, Russet, or King Edward) (Peeled and cut into thin matchsticks)
  • Beef fat (For infusing with garlic and rosemary)
  • Garlic (Used to infuse the beef fat)
  • Rosemary (Added to the beef fat for infusion)
  • Salt (To season the potatoes; amount not specified)
  • Butter (Added around the sides of the pan; amount not specified)
  • Chives (For topping)

Steps

  1. 1

Peel the potatoes, then slice and julienne them into thin matchsticks. Choose a high-starch variety such as Agria, Russet, or King Edward.

  2. 2

Melt the beef fat in a pan. Add the garlic and infuse it until it starts to color.

  3. 3

Add the rosemary to the infused beef fat and bring it to a solid boil.

  4. 4

Season the potato matchsticks with salt. Pour the hot infused fat over them and mix thoroughly so the potatoes are coated; doing this while the fat is hot helps release some of the potato starch.

  5. 5

Press the potato mixture into a non-stick pan. Flatten the top and tuck in the edges as it cooks to keep the cake neat and round.

  6. 6

Cook over low heat until the bottom is golden brown, up to 10 minutes.

  7. 7

Add butter around the sides of the pan.

  8. 8

Carefully flip the potato cake. Keep the pan moving in a circular motion to help keep it perfectly round.

  9. 9

Continue cooking until the sides are golden and crispy.

  10. 10

Remove the potato cake from the pan and top with chives. Serve as an accompaniment to steak or for breakfast.
