Ingredients

  • 0.75 lb Pasta of your choice
  • 1 lb Shrimp (Peeled and deveined)
  • Salt and pepper (To taste; also use salt in the pasta water)
  • 0.25 tsp Paprika (The ingredient list describes this as sprinkles; approximately ¼ tsp is added to the sauce, and more is used to season the shrimp)
  • 1 tbsp Oil
  • 2 tbsp Butter
  • 1 Small onion (Finely chopped)
  • 1 Garlic clove
  • 0.333 cup White wine
  • 2 cup Heavy whipping cream
  • 0.333 cup Parmesan cheese (Add to taste if desired; extra Parmesan may also be used as garnish)
  • Parsley, basil, or freshly cracked pepper (For garnish, if desired)

Steps

  1. 1

Cook the pasta in salted water according to the package instructions. Drain it and do not rinse the noodles, because leaving them unrinsed helps the sauce adhere better.

  2. 2

Lightly season the shrimp with salt, pepper, and paprika.

  3. 3

Preheat a large skillet over medium-high heat and add the oil. Once the oil is hot, add the shrimp in a single layer.

  4. 4

Cook the shrimp for 1–2 minutes per side, until fully cooked and no longer translucent. Remove the shrimp from the skillet and place it in a separate bowl.

  5. 5

In the same skillet over medium-high heat, add the butter and finely chopped onion. Sauté the onion until golden.

  6. 6

Stir in the garlic and sauté for another minute.

  7. 7

Stir in the white wine. Reduce the heat to 25% and scrape the bottom of the pan to deglaze it.

  8. 8

Stir in the heavy whipping cream and simmer for 2 minutes.

  9. 9

Sprinkle the Parmesan into the pan and stir until the sauce is creamy and smooth. Add about ¼ teaspoon paprika, then season with salt and pepper to taste.

  10. 10

Turn off the heat. Stir the cooked shrimp and the drained, unrinsed pasta into the sauce.

  11. 11

Garnish with parsley, basil, extra Parmesan, or freshly cracked pepper, if desired.

Notes

The author recommends cooking an extra 1 lb of shrimp to toss into a green salad the next day. A reader comment noted that the sauce may be runny for some preferences and suggested using less cream and more Parmesan, but this is not part of the published recipe.
