Ingredients
- 3 eggs
- 0.25 cup sugar
- 4 tbsp butter
- 10 g yeast
- salt (A pinch)
- 250 ml water
- 1 lemon zest (Zest of one lemon)
- 500 g flour (Sifted)
- 100 g dried cranberries or raisins (Choose cranberries or raisins)
- 150 g candied mixed fruit
- mixed fruit (Some, for sprinkling on top)
Steps
- 1
Add the eggs, sugar, butter, yeast, a pinch of salt, water, and lemon zest to the Thermomix bowl.
- 2
Insert the butterfly whisk, cover the bowl, and mix at speed 2 for 3 minutes.
- 3
Remove the butterfly whisk. The mixture may look loose at this point.
- 4
Add the sifted flour to the bowl.
- 5
Cover and mix at speed 3 for 1 minute. The mixture may not be fully mixed yet; the source indicates this is all right.
- 6
Knead for 3 minutes at 37°C, until the dough is smooth and shiny.
- 7
Add the dried cranberries or raisins and the candied mixed fruit.
- 8
Cover and knead for 3 minutes at 37°C.
- 9
Transfer the dough to a large bowl, cover it, and let it proof until doubled in size, typically 30–40 minutes.
- 10
Divide the dough between two panettone molds. Weighing is not necessary; the source says each portion will be about 610 g.
- 11
Use a spoon to push the dough toward the sides of each mold so it fills them.
- 12
Sprinkle some mixed fruit over the dough.
- 13
Cover the molds and let the dough rest for 30 minutes, until puffed up.
- 14
Bake in a preheated oven at 160°C for 40–50 minutes.
Notes
The source shows the process on a Thermomix and uses two panettone molds. It does not specify an amount for the fruit sprinkled on top. The stated dough portion is about 610 g per mold.
