Ingredients

  • 2 cup boxed complete pancake mix (Plus the water or other ingredients required by the package directions; the author used a complete mix requiring only water.)
  • 0.5 lb breakfast sausage
  • 0.5 lb bacon
  • 1 cup shredded Colby Jack cheese (Freshly shredded is recommended by the author. Shredded cheddar may also be used.)
  • 0.25 cup maple syrup (Reserve additional syrup for serving.)
  • cooking spray or grease (For greasing the muffin pans if they are not silicone.)
  • maple syrup (For dipping and serving.)

Steps

  1. 1

Preheat the oven to 400°F. Line a sheet pan with parchment paper and arrange the bacon on it.

  2. 2

Bake the bacon at 400°F for 20–25 minutes, or until cooked. While the bacon cooks, brown the breakfast sausage in a pan until fully cooked.

  3. 3

Drain the grease very well from both the bacon and sausage. Chop the cooked bacon and set it aside with the cooked sausage.

  4. 4

Prepare the pancake batter according to the directions on the pancake-mix package. If using a complete mix like the author’s, add the required water; otherwise add whatever ingredients the package specifies.

  5. 5

Stir the cooked sausage, chopped bacon, shredded Colby Jack cheese, and 1/4 cup maple syrup into the prepared pancake batter until the fillings are distributed throughout.

  6. 6

Grease two mini muffin pans if they are not silicone. Silicone pans do not need to be sprayed according to the author.

  7. 7

Divide the loaded pancake batter between the two mini muffin pans.

  8. 8

Bake at 400°F for 12–15 minutes, until the pancake bites are fully cooked.

  9. 9

Serve the pancake bites with additional maple syrup for dipping. Fresh fruit may also be served alongside.

Notes

The recipe makes approximately 48 mini pancake bites. Any pancake mix may be used, but follow that package’s preparation directions. Leftovers keep well in the refrigerator or freezer; microwave them on a plate until hot. The source includes a half-batch comment using different ingredients, but the authoritative recipe quantities above are the full-batch amounts.
