Ingredients

  • 0.75 cup Warm water (Warm, about 110°F / 43°C)
  • 1.5 tsp Sugar
  • 1.5 tsp Active dry yeast
  • 2 cup All-purpose flour
  • 1 tsp Salt
  • Oil (For oiling the bowl)
  • Water (For boiling the bagels)
  • 1 Egg yolk (For the egg wash)
  • 1 tbsp Milk (For the egg wash)
  • Toppings of choice (Optional; leave plain if desired)
  • Jalapeño cheese (Optional suggested topping)
  • Sesame seeds (Optional suggested topping)

Steps

  1. 1

Combine the warm water, about 110°F / 43°C, with the sugar and active dry yeast. Set the mixture aside for 10 minutes, until the yeast is frothy on top. If it does not foam, the yeast may be inactive or the water may have been too hot; make the mixture again.

  2. 2

Mix the all-purpose flour and salt in a large bowl or the bowl of a stand mixer.

  3. 3

Add the yeast mixture to the flour mixture. Knead with a dough hook on a KitchenAid or other stand mixer for 10 minutes. If kneading by hand, work the dough until it is kneaded thoroughly.

  4. 4

Oil a large bowl and place the dough inside. Cover the bowl with a clean cloth and let the dough rest for 1 hour, or until it has doubled in size.

  5. 5

Divide the dough into 4 equal portions and shape each portion into a ball.

  6. 6

Shape each dough ball into a bagel by poking a hole through the center and stretching the dough around until it forms a bagel shape.

  7. 7

Let the shaped bagels rest for another 20–30 minutes.

  8. 8

Bring a pot of water to a boil. Add the bagels one at a time.

  9. 9

Boil each side of each bagel for 1 minute, then transfer the boiled bagels to a baking tray lined with parchment paper.

  10. 10

Whisk together the egg yolk and milk to make the egg wash. Brush the tops of the bagels with the egg wash.

  11. 11

Top the bagels as desired, or leave them plain. Jalapeño cheese and sesame are suggested toppings.

  12. 12

Bake at 400°F for 20 minutes, or until the bagels are golden brown. Enjoy.
