- 0.5 chicken stock pot (Half a stock pot)

Steps
- 1
Grate the courgette and squeeze out as much liquid as possible. Grate the carrot and slice the spring onions.
- 2
Place all of the meatball ingredients—the chicken mince, courgette, carrot, spring onions, minced garlic, ginger paste, chilli paste, soy sauce, egg, and juice of 1/2 lime—in a bowl. Mix well until evenly combined.
- 3
Divide the mixture into 12 portions and shape each portion into a meatball.
- 4
Heat a pan over medium heat and cook the meatballs for 10 minutes, turning as needed so they cook through.
- 5
Remove the cooked meatballs from the pan and set them aside.
- 6
Add the sliced red pepper to the same pan and fry for 5 minutes.
- 7
Add the minced garlic, ginger paste, soy sauce, coconut milk, red Thai curry paste, sliced spring onions, chopped coriander, juice of 1/2 lime, half a chicken stock pot, and honey to the pan. Mix well.
- 8
Leave the sauce to simmer over medium heat for 10 minutes.
- 9
Return the meatballs to the pan, reduce the heat to low, and simmer for a further 10 minutes, until the sauce has started to thicken.
- 10
Serve the coconut Thai chicken meatballs with rice and vegetables.
