Ingredients

  • 200 g Bacon (high quality, diced)
  • 0.5 White onion (medium, diced)
  • 0.25 cup Brown sugar
  • 0.25 cup Vinegar
  • 2 tbsp Worcestershire sauce

Steps

    Start by dicing the half medium white onion and the 200 grams of bacon into small, uniform pieces.

    Place the bacon in a skillet over medium heat and sauté until it has browned slightly and released its fat.

    Remove the excess fat from the skillet, leaving just enough to cook the onion.

    Add the diced onion to the skillet with the bacon and cook until the onion is golden brown.

    Stir in a quarter cup of brown sugar, a quarter cup of vinegar, and two tablespoons of Worcestershire sauce.

    Allow the mixture to cook over low heat so it caramelizes and the liquid reduces.

    Check the consistency by running a spatula along the bottom of the skillet; when the bottom is visible (forming a "path") and the mixture doesn't close up immediately, it is ready.

    Remove from heat and let the jam rest before serving so it finishes thickening.
