Ingredients

  • 2 Rice paper sheets (Soak for a few seconds in the egg before assembling)
  • 150 g 5% fat ground beef (Shape into two balls)
  • 2 Cheddar (Two thin slices)
  • 1 Egg (Beat in a large dish)
  • Corn flakes or panko breadcrumbs (For coating; use crushed corn flakes or panko breadcrumbs)
  • Gherkins or pickles (Optional, in a few slices)
  • Garlic powder
  • 100 g Skyr (For the sauce)
  • 1 c. à café Dijon mustard (Small spoonful)
  • 1 c. à soupe Light ketchup (For the sauce)
  • 1 c. à café White vinegar (For the sauce)
  • Cooking oil spray (Lightly spray before cooking)

Steps

  1. 1

Prepare the sauce by mixing the skyr, Dijon mustard, light ketchup and white vinegar. Set some aside for dipping when serving.

  2. 2

Shape the 150 g of ground beef into two balls.

  3. 3

Heat a frying pan. Place the two meatballs in the pan and smash them to form two smash patties.

  4. 4

Place a thin slice of cheddar on each patty, then cook until the cheese has melted. Set the patties aside.

  5. 5

Beat the egg in a large dish.

  6. 6

Dip the two rice paper sheets in the beaten egg for a few seconds.

  7. 7

Place the soaked rice paper sheets over a bowl to make assembling the burger easier.

  8. 8

Place one patty with its melted cheese in the center of the rice paper sheets.

  9. 9

Add a little sauce, then place the second patty on top. Add a little more sauce and, if desired, a few slices of gherkin or pickle.

  10. 10

Fold the edges of the rice paper sheets around the filling to seal the burger.

  11. 11

Coat the burger with crushed corn flakes or panko breadcrumbs.

  12. 12

Place the burger in the air fryer basket or on a baking sheet. Lightly spray with cooking oil.

  13. 13

Cook at 180 °C for up to 10 minutes, until the coating is crispy.

  14. 14

Serve the burger with the remaining sauce for dipping.
