Weights are estimates. Together, the ingredients weigh about 1.01 kg before cooking, which is about 250 g per serving.
Steps
In a high-speed blender, combine the fresh strawberries, water, sugar, and lemon juice.
Blend on high until the mixture is completely smooth and the sugar has dissolved.
Strain the mixture through a fine-mesh sieve into a large pitcher to remove the strawberry seeds, if a smoother texture is desired.
Stir in the coconut milk until the drink is well-combined and has a consistent creamy pink color.
Fill glasses with ice cubes and pour the strawberry refresher over the ice. Serve immediately.
Notes
You can substitute the coconut milk with sweetened condensed milk for a richer, sweeter version (reduce the granulated sugar if doing so). For a sparkling version, use only 1 cup of water to blend and top off with 1 cup of sparkling water or club soda before serving.
