Ingredients
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp Italian seasoning
- 1 tsp Creole seasoning
- 1 tsp ground black pepper
- 1 tsp cumin powder
- 1 tsp adobo seasoning
- 1 tsp dried parsley (Source spells this as “dried parley.”)
- whole chicken with skin (Keep the skin on; remove the backbone and spatchcock the chicken.)
- cooking oil (For oiling both sides of the chicken.)
- 1 potato (Cut into pieces; the author used 1 potato.)
- 1 small onion (Cut into pieces.)
- cherry tomatoes (A few, cut as needed.)
- 4 tbsp butter (Add on top of the chicken.)
- 0.5 lemon lemon juice (Juice half a lemon over both sides of the chicken.)
Steps
- 1
Remove the backbone from the whole chicken and lay the chicken flat to spatchcock it. The backbone may be saved for making chicken broth. Pat the chicken dry with paper towels.
- 2
Combine the onion powder, garlic powder, paprika, Italian seasoning, Creole seasoning, ground black pepper, cumin powder, adobo seasoning, and dried parsley.
- 3
Place the chicken in a baking dish. Rub or brush cooking oil over both sides of the chicken.
- 4
Evenly spread the seasoning mixture over both sides of the chicken, reserving about 2 tablespoons of the seasoning for the vegetables.
- 5
Cut the potato, small onion, and cherry tomatoes. Toss the vegetables with the reserved seasoning, then place them alongside the chicken in the same baking dish.
- 6
Place the butter on top of the chicken. Squeeze the juice of half a lemon over both sides of the chicken.
- 7
Bake at 350°F for 50 minutes. About halfway through cooking, baste the chicken with the juices collected in the bottom of the baking dish.
- 8
Broil on low for 2 minutes, then serve with the roasted vegetables and the flavorful juices from the baking dish.
Notes
The source does not specify the chicken's weight, the amount of oil, the exact quantity of cherry tomatoes, or a target internal temperature. The author recommends pouring the juices from the bottom of the baking dish over the chicken to keep it moist and flavorful.
