Ingredients

  • 500 g Lean steak (Thinly sliced)
  • 3 tbsp Oyster sauce (1 tbsp for the marinade and 2 tbsp for the sauce)
  • 3 tsp Dark soy sauce (2 tsp for the marinade and 1 tbsp for the sauce)
  • 1 tsp Baking soda (For the marinade)
  • 2 tsp Cornstarch (For the marinade)
  • 2 tbsp Soy sauce (For the sauce)
  • 1 tbsp Shaoxing wine (For the sauce)
  • 1 tbsp Coconut sugar (For the sauce)
  • 1 tsp Sesame oil (For the sauce)
  • 0.5 tsp Chinese five-spice (The source lists 1/2 tsp each five-spice and white pepper; use the white pepper in the marinade as directed and the seasonings in the sauce as applicable)
  • 0.5 tsp White pepper (Use in the marinade as stated; the source lists 1/2 tsp each Chinese five-spice and white pepper for the sauce)
  • 2 tbsp Water (For the sauce)
  • 0.5 tbsp Oil (For stir-frying the beef and rice; use the remaining oil after cooking the beef)
  • 4 cup Day-old jasmine rice (Cooked)
  • 4 cup Broccoli florets (Small florets)
  • 5 Garlic (Cloves, minced)
  • 2 tsp Ginger paste (For stir-frying)
  • 3 Spring onions (Whites and green parts separated)
  • 4 Eggs (Fried, for serving)
  • Chili oil (For serving)
  • Sesame seeds (For serving)

Steps

  1. 1

Combine the thinly sliced steak with 1 tablespoon oyster sauce, 2 teaspoons dark soy sauce, the baking soda, cornstarch, and the white pepper. Set the beef aside to marinate for at least 15 minutes.

  2. 2

While the beef marinates, combine the sauce ingredients—2 tablespoons oyster sauce, soy sauce, 1 tablespoon dark soy sauce, Shaoxing wine, coconut sugar, sesame oil, Chinese five-spice, white pepper, and water—in a bowl.

  3. 3

Cover the broccoli florets with boiling water and leave them for 1–2 minutes. Drain them well.

  4. 4

Heat a little of the oil in a wok or large pan over high heat.

  5. 5

Add the marinated beef in a single layer and stir-fry for 2–3 minutes, until browned. Remove the beef from the wok and set it aside.

  6. 6

Add the remaining oil to the wok over high heat. Add the minced garlic, ginger paste, and spring onion whites, and stir-fry for 1 minute.

  7. 7

Add the day-old jasmine rice. Break up any clumps and stir-fry for 1–2 minutes, until the rice is hot and slightly toasted.

  8. 8

Add the blanched broccoli and prepared sauce. Stir-fry for another 1–2 minutes, until the rice and broccoli are evenly coated.

  9. 9

Return the cooked beef to the pan and toss until heated through.

  10. 10

Stir through the spring onion greens, then serve the fried rice hot.

  11. 11

Top each serving with a fried egg, chili oil, and sesame seeds.

Notes

The source specifies day-old jasmine rice but does not provide a method for cooking or cooling the rice beforehand. The source's white-pepper wording is slightly ambiguous: it is explicitly used in the marinade and is also listed with the sauce seasonings.
