Ingredients

  • 2 chicken breast (diced)
  • 1 tbsp cajun seasoning (for chicken seasoning)
  • 1 tsp garlic granules (for chicken seasoning)
  • 1 tsp onion salt (for chicken seasoning)
  • 150 g dried pasta
  • 1 brown onion (diced)
  • 1 tsp garlic paste
  • 1 tbsp tomato puree
  • 150 ml chicken stock
  • 100 ml single cream
  • 1 tsp cajun seasoning (for sauce)
  • 1 tsp smoked paprika (for sauce)
  • 50 g chorizo (diced)

Steps

    Dice the 2 chicken breasts. In a pan, fry off the chicken with 1 tbsp of cajun seasoning, 1 tsp of garlic granules, and 1 tsp of onion salt until cooked through. Set the chicken aside.

    In the same pan, add the diced brown onion and fry for around 10 minutes or until softened.

    Add 1 tsp of garlic paste and 1 tbsp of tomato puree to the onions. Stir and allow to fry for 1 to 2 minutes.

    Pour in the 150ml chicken stock and 100ml single cream. Give it a really good stir.

    Add the remaining seasoning to the sauce: 1 tsp of cajun seasoning and 1 tsp of smoked paprika. Allow the sauce to simmer for 15 minutes.

    While the sauce simmers, boil your pasta in a separate pot of salted water according to package instructions.

    During the last 5 minutes of the pasta boiling, fry off the 50g of diced chorizo in a separate pan and set aside until the pasta is cooked.

    Add the cooked chicken back into the sauce for the final 5 minutes of simmering.

    Once the pasta is done, drain it and add it to the pan with the sauce and chicken. Stir to combine.

    Add in the fried chorizo, stir once more, and serve.

Notes

The recipe uses single cream for a lighter sauce; you can substitute with heavy cream for a richer result. Ensure the chorizo is fried until slightly crispy for the best texture.
