Banana Bread Iced Latte

- 1 Ripe banana (mashed)
- 0.25 cup Brown sugar
- 0.25 cup Water
- 0.5 tsp Cinnamon
- 0.5 tsp Vanilla extract
- 2 shot Espresso (or 1/2 cup strong brewed coffee)
- 1 cup Milk (dairy or oat milk recommended)
- Ice (enough to fill the glass)

In a small saucepan, combine the mashed ripe banana, brown sugar, water, and cinnamon.

Place the saucepan over medium heat and bring to a gentle simmer, stirring frequently to dissolve the sugar.

Let the mixture simmer for 5-7 minutes until the banana has softened and the liquid has thickened into a syrup. Stir in the vanilla extract at the end.

Remove from heat. For a smoother latte, strain the syrup through a fine-mesh sieve to remove banana pulp, or leave it as is for a more rustic texture.

Allow the syrup to cool before using.

To assemble the drink, add 1-2 tablespoons of the banana syrup to the bottom of a tall glass.

Fill the glass with ice cubes.

Pour the milk over the ice, leaving room at the top for the coffee.

Pour the espresso shots or strong coffee over the milk.

Stir well to combine the syrup from the bottom and enjoy.
Notes
The syrup can be made in larger batches and stored in the refrigerator for up to a week. If using frozen bananas, thaw them completely before mashing and simmering.
