Ingredients

  • 1 Whole packer brisket (trimmed and seasoned with salt and pepper)
  • 2 cup Sushi rice (cooked and seasoned with rice vinegar, sugar, and salt)
  • 0.5 cup Vegetable oil (for frying rice cakes)
  • 4 cup Shredded cabbage mix (for coleslaw)
  • 2 tbsp White miso paste (for slaw dressing)
  • 0.25 cup Mayonnaise (for slaw dressing)
  • 1 tbsp Rice vinegar (for slaw dressing)
  • 1 tsp Honey (for slaw dressing)
  • Barbecue sauce (for drizzling)

Steps

    Trim the brisket of excess fat and season liberally with a 50/50 blend of kosher salt and coarse black pepper.

    Smoke the brisket at 225°F (107°C) using a pellet grill or smoker until the internal temperature reaches approximately 190-200°F and the bark is well-developed.

    Wrap the brisket in butcher paper and continue cooking until probe tender, then allow it to rest in a warm environment (like an oven set to 150°F) for up to 12 hours.

    Prepare sushi rice according to package instructions. While warm, press the rice into a plastic-wrap-lined square baking dish to a thickness of about 3/4 inch. Chill in the refrigerator for at least 4 hours or overnight until firm.

    In a small bowl, whisk together the white miso paste, mayonnaise, rice vinegar, and honey. Toss this dressing with the shredded cabbage mix and set aside.

    Remove the chilled rice block from the pan and cut into small rectangular bite-sized pieces.

    Heat vegetable oil in a skillet over medium-high heat. Fry the rice rectangles until golden brown and crispy on all sides. Drain on paper towels.

    Slice or chop the rested brisket into small pieces suitable for topping the rice cakes.

    To assemble, place a piece of crispy rice on a serving platter. Top with a generous portion of brisket, a dollop of miso slaw, and a small drizzle of barbecue sauce.
