Ingredients

  • 1 lb 80/20 ground beef
  • 0.5 yellow or red onion (grated)
  • 1 tbsp red pepper paste (optional)
  • 2 cloves garlic (crushed)
  • salt (to taste)
  • 1 tsp black pepper
  • 1.5 tsp paprika (for the meat)
  • 2 tbsp fresh parsley (chopped; for the meat)
  • 0.25 cup butter (melted)
  • 2 tbsp tomato paste (for the tomato sauce)
  • 0.25 cup tomato puree (for the tomato sauce)
  • 1 tbsp red pepper paste (optional; for the tomato sauce)
  • salt (to taste; for the tomato sauce)
  • 0.5 tsp black pepper (for the tomato sauce)
  • 1 tsp paprika (for the tomato sauce)
  • water (as needed to loosen the tomato sauce)
  • 2 lavash bread or large tortillas (used to spread and wrap the meat)
  • 4 tbsp plain yogurt (for serving)
  • sumac or paprika (for finishing)
  • fresh parsley (for serving)
  • roasted tomatoes (for serving)
  • roasted serrano peppers (for serving)
  • oil (for lightly spraying the nonstick pan)

Steps

  1. 1

In a bowl, combine the ground beef, grated onion, garlic, optional red pepper paste, salt, black pepper, paprika, and chopped parsley. Mix thoroughly until the mixture is evenly incorporated.

  2. 2

Divide the meat mixture evenly between the two lavash breads or large tortillas. Spread the mixture into a thin, even layer over each bread.

  3. 3

Heat a pan until hot. Place each lavash meat-side down in the pan and cook for about 4 minutes, or until the meat is cooked through.

  4. 4

Flip the lavash, then remove it from the heat. Tightly roll each lavash into a log.

  5. 5

Cut each rolled lavash into pieces approximately 3/4 inch wide. Thread the pieces onto skewers.

  6. 6

For the tomato sauce, whisk together the melted butter, tomato paste, tomato puree, optional red pepper paste, salt, black pepper, paprika, and a little water until smooth and loosened.

  7. 7

Brush the skewers generously with the tomato sauce.

  8. 8

Lightly spray a nonstick pan with oil. Toast the sauced skewers for about 2 minutes per side, until lightly golden.

  9. 9

Spread the plain yogurt over serving plates. Place the skewers on top, spoon over extra tomato sauce, and finish with sumac or paprika, fresh parsley, roasted tomatoes, and roasted serrano peppers.

Notes

The source does not specify the exact amount of water for loosening the sauce or quantities for the garnishes and roasted vegetables. Use only enough water to make the sauce smooth and spoonable.
