Ingredients
- 1 lb ground beef
- 0.333 cup refried beans
- 0.25 tsp salt
- 2 tbsp chili powder
- 0.25 cup mild taco sauce (Ortega or Pico Pica brand preferred)
- 12 corn tortillas (soft)
- 3 cup cooking oil (Crisco brand preferred; for frying)
- 6 slice American cheese
- 1 head lettuce (finely chopped)
Steps
- 1
In a medium skillet, brown the ground beef over medium heat until fully cooked. Drain off the excess fat.
- 2
Add the refried beans to the skillet with the beef. Use a potato masher or a large spoon to incorporate the beans into the beef until the mixture is smooth.
- 3
Stir in the salt, chili powder, and taco sauce. Simmer the mixture for a few minutes to allow the flavors to blend.
- 4
Heat the cooking oil in a large skillet or deep fryer to approximately 350°F (175°C).
- 5
Place about 2 tablespoons of the meat mixture onto the center of each corn tortilla. Fold the tortillas in half and secure with a toothpick if necessary.
- 6
Fry the tacos in the hot oil for 30 to 60 seconds per side until the shells are crispy and golden brown.
- 7
Remove the tacos from the oil and drain on paper towels. Carefully open each taco slightly and insert half a slice of American cheese and a handful of finely chopped lettuce.
- 8
Serve immediately while the shell is hot and the cheese begins to melt.
Notes
The unique texture of Jack in the Box tacos comes from the addition of refried beans to the ground beef, which creates a smooth, paste-like filling. For the most authentic flavor, use Crisco oil for frying and Ortega or Pico Pica brand taco sauce.
