A smooth, strong cold brew concentrate made by steeping coarsely ground coffee at room temperature for 18 hours. Straining the brew twice produces a clean cup, which is then diluted two parts cold brew to one part water and served over ice.

Ingredients

  • 175 g Coffee beans (Use the oldest beans available; grind very coarsely, about the texture of sea salt.)
  • 1400 ml Water (Use half initially to saturate the grounds, then add the remaining half.)
  • Water, for dilution (Use a 2:1 ratio of cold brew concentrate to water when serving.)
  • Ice (For serving in a large glass; use as much as desired.)

Steps

    Grind 175 g of coffee beans on a very coarse setting, roughly the texture of sea salt. The creator recommends using older beans because cold steeping is less likely to emphasize stale flavors.

    Line a large mason jar with cheesecloth, leaving enough cloth over the rim to lift out the grounds later.

    Add the coarsely ground coffee to the cheesecloth-lined jar.

    Pour in half of the 1,400 ml water, about 700 ml. Stir thoroughly with a spoon so all of the coffee grounds are fully saturated.

    Add the remaining 700 ml water and stir gently to combine.

    Close the jar and steep the coffee at room temperature for 18 hours, preferably overnight.

    The next day, remove the coffee grounds and cheesecloth from the jar, allowing the liquid to drain without aggressively pressing the grounds.

    Strain the cold brew a second time through a coffee filter to remove fine sediment and produce a cleaner concentrate.

    To serve, fill a large glass with ice. Pour in two parts cold brew concentrate and one part water, then stir. The concentrate may also be used as a substitute for espresso when needed.

Notes

The finished brew is a concentrate rather than ready-to-drink coffee. Keep the strained concentrate refrigerated for best quality, and dilute individual servings at a 2:1 cold brew-to-water ratio.
