Ingredients
- 2 lb Beef bones (for roasting)
- Aromatic vegetables (such as onion and ginger, for roasting)
- 1.5 lb Beef chuck (or brisket; main protein)
- 4 L Water (for simmering)
- Pho spices (star anise, cinnamon, etc., for spice bag)
- Fish sauce (to taste for deep umami flavor)
- 1 lb Rice noodles (for serving)
Steps
- 1
Roast the beef bones and aromatic vegetables until they have a good char and smoky flavor.
- 2
Place the roasted bones, vegetables, and the main protein (beef chuck or brisket) into a large pot with water.
- 3
Simmer the mixture for a few hours to allow the flavor and golden color to transfer to the broth.
- 4
After simmering for 2 hours, remove the main protein (chuck/brisket) and immediately soak it in an ice bath to stop it from overcooking.
- 5
When you are about one hour away from serving, toast your pho spices.
- 6
Add the toasted spices to a spice bag and place it in the simmering broth.
- 7
Season the broth with fish sauce to provide a deep umami flavor.
- 8
Remove the spice bag after about 30 minutes; do not leave it in too long.
- 9
Strain the broth to ensure it is super clear.
- 10
Serve the clear, golden broth over prepared rice noodles with the sliced beef protein.
Notes
The creator notes that roasting bones provides superior color and flavor compared to the par-boil method. Chuck is recommended as a more affordable alternative to brisket. Ensure the spice bag is removed after 30 minutes to prevent the spices from overpowering the broth.
