Weights are estimates. Together, the ingredients weigh about 665 g before cooking, which is about 665 g per serving.
Steps
Preheat your oven to 180°C (350 °F) (350°F (180 °C)).
Dice the Carisma potatoes, chicken breast, red onion, and red capsicum into bite-sized pieces.
In a large mixing bowl or directly in an oven-safe dish, combine the potatoes, chicken, onion, and capsicum.
Add the garlic paste, light cream cheese, Nando’s peri peri sauce, and Italian herbs to the bowl.
Mix all ingredients thoroughly until the chicken and vegetables are evenly coated in the sauce and cream cheese.
Spread the mixture evenly into an oven-safe baking dish if you mixed it in a separate bowl.
Top the mixture with the shredded tasty light cheese.
Place the dish in the oven and bake for 60 minutes at 180°C (350 °F) until the potatoes are tender and the chicken is fully cooked.
Notes
Using Carisma potatoes is recommended as they are a lower-GI and lower-calorie potato variety available at Coles. This recipe is designed to be high protein and macro-friendly for weight loss.
