Ingredients
- 2 cup all-purpose flour
- 0.667 cup hot water (About; use more or less if needed)
- salt (For the dough, to taste)
- 1 cup scallions (Chopped; for the pancakes)
- black sesame seeds (For sprinkling)
- 0.333 cup sesame oil (For brushing the dough)
- 0.333 cup cooking oil (For pan-frying)
- 1 tbsp light soy sauce (For the dipping sauce)
- 0.5 tbsp sesame oil (For the dipping sauce)
- salt (For the dipping sauce, to taste)
- 1 tbsp chili oil (For the dipping sauce)
- green onion (Chopped; for the dipping sauce)
- coriander (Chopped; for the dipping sauce)
Steps
- 1
Put the all-purpose flour into a bowl. Pour in the hot water and add salt to taste, then stir well.
- 2
Use your hands to combine the mixture into a rough-looking dough. Add more flour if needed, then gather the dough into a ball, cover it, and let it rest for 10 minutes.
- 3
After resting, knead the dough until very smooth, about 3–5 minutes.
- 4
Divide the dough into equal portions and shape each portion into a smooth round ball. Cover the portions and let them rest for 20–30 minutes.
- 5
Using a rolling pin, flatten one dough ball into a thin, flat shape.
- 6
Brush the flattened dough with sesame oil, then sprinkle chopped scallions and black sesame seeds over the top.
- 7
Fold the dough up into a cylinder. Slightly lengthen the cylinder with both hands, then roll it from one end to the other to form a snail shape. Tuck the end into the dough.
- 8
Roll the shaped dough into a round circle. Repeat the rolling, filling, shaping, and flattening process with the remaining dough portions.
- 9
Combine the light soy sauce, sesame oil, salt, chili oil, chopped green onion, and chopped coriander to make the dipping sauce.
- 10
Warm a pan over high heat and add some cooking oil. Place the scallion pancakes in the pan, then adjust the heat to medium-high.
- 11
Cover and cook for 3–4 minutes, until the bottom is golden brown.
- 12
Flip the pancakes and cook the other side, covered, for an additional 3–4 minutes or until cooked through.
- 13
Serve the scallion pancakes warm with the dipping sauce and enjoy.
