Tortilla Chicken and Bacon Pizza Stack
A budget-friendly twist on pizza that uses layered tortilla wraps to create a crispy, multi-tiered stack loaded with seasoned chicken, bacon, and melted cheese.

Ingredients
- 2 Chicken fillets (diced)
- 1 tbsp Seven Colours Grill Seasoning™
- 1 tsp Garlic powder
- 1 tbsp Oil (for frying)
- 4 tbsp Barbeque sauce (divided)
- 3 Tortilla wraps
- 2 Bacon rashers (sliced)
- 0.25 cup Mozzarella cheese (grated, divided)
- 0.5 cup Cheddar cheese (grated, divided)
- 1 tbsp Tomato sauce
- 0.25 Red onion (sliced)
- 4 Cocktail tomatoes (sliced, divided)
- 2 Button mushrooms (sliced)
Steps

Season the diced chicken fillets with Seven Colours Grill Seasoning™ and garlic powder.

Heat the oil in a frying pan over medium heat and fry the chicken until cooked through.

Add 2 tablespoons of barbeque sauce to the pan, stir to coat the chicken thoroughly, and remove from heat.

Line a baking dish with parchment paper and place the first tortilla wrap on the tray.

Spread 1 tablespoon of barbeque sauce evenly over the first wrap.

Top with a layer of the cooked chicken, sliced bacon, and a portion of the mozzarella and cheddar cheese.

Place the second tortilla on top of the first layer and spread with 1 tablespoon of tomato sauce.

Add the sliced red onion, half of the cocktail tomatoes, and another mix of cheddar and mozzarella cheese.

Add the final tortilla wrap on top and spread with the remaining 1 tablespoon of barbeque sauce.

Top with the remaining chicken, sliced mushrooms, the rest of the cocktail tomatoes, and the remaining cheese.

Bake in a preheated oven at 180 °C (350 °F) for 10 minutes, or until the cheese has melted and the edges of the tortillas are crispy.

Slice into wedges and serve immediately.
Notes
Seven Colours Grill Seasoning is a popular South African spice blend; if unavailable, use a similar all-purpose BBQ or grill seasoning.
