Ingredients

  • 1 lb beef skirt steak (Cut into 1/2-inch strips)
  • 1 tsp kosher salt
  • 4 tbsp high-smoke-point oil (Peanut, canola, or vegetable oil; divided)
  • 1 large red onion (Cut into thick strips)
  • 6 green onions (Cut into 2-inch pieces)
  • 1 ají amarillo chile pepper (Thawed, seeded, and sliced into thin strips)
  • 2 Roma tomatoes (Quartered)
  • 4 cloves garlic (Minced or grated)
  • 1 inch fresh ginger (Grated)
  • 2 tbsp soy sauce
  • 1 tbsp red wine vinegar
  • 0.25 cup fresh cilantro (Coarsely chopped)
  • 1 lb French fries (Cooked, hot, and crispy)

Steps

  1. 1

Cut the beef skirt steak into 1/2-inch strips and sprinkle it with the kosher salt. Let it sit while you prepare the hot pan.

  2. 2

Heat a large pan over high heat until it is ripping hot. Add enough of the divided oil to coat the pan. The cooking may become smoky because the pan is very hot.

  3. 3

Sear the beef in the hot oil, working in small batches if necessary so the pieces brown rather than steam. Remove the seared beef from the pan.

  4. 4

Add a little more of the divided oil to the pan. Add the red onion strips and brown them, working in small batches if needed. Remove the onion from the pan.

  5. 5

Add a little more of the divided oil, then add the green onion pieces. Leave them undisturbed for 30 seconds before tossing them.

  6. 6

Add the seeded, thinly sliced ají amarillo to the green onions. Cook for another 30 seconds.

  7. 7

Add the quartered tomatoes. Brown the vegetables without allowing them to become too soft.

  8. 8

Add the minced or grated garlic and grated ginger. Cook until fragrant.

  9. 9

Pour in the soy sauce and red wine vinegar, coating the vegetables and loosening the flavorful browned bits in the pan.

  10. 10

Return the browned red onion and seared beef to the pan. Toss everything together and finish with the chopped cilantro.

  11. 11

Serve the lomo saltado with the cooked, hot, crispy French fries.

Notes

The source does not specify exact searing times or a target internal temperature; cook the beef to your preferred doneness while browning it quickly. The high-heat process may produce smoke, so use good ventilation. Work in batches as needed to avoid crowding the pan.
