Ingredients

  • 7 Scotch finger biscuits (crushed)
  • 1 tbsp butter (melted)
  • 2 tbsp custard powder
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • 1 cup milk
  • fresh cream (optional, for topping)

Steps

  1. 1

Crush the Scotch finger biscuits and mix them with the melted butter in a bowl.

  2. 2

Press the biscuit mixture firmly into the bottom of a square glass container to form the base.

  3. 3

In a small pot, whisk together the custard powder, sugar, vanilla, and milk until well combined.

  4. 4

Cook the custard mixture over medium heat, stirring constantly, until it reaches a boil and thickens.

  5. 5

Turn off the stove and immediately pour the hot custard over the prepared biscuit base.

  6. 6

Allow the pie to cool to room temperature, then place it in the refrigerator to set completely.

  7. 7

Once set, top with fresh cream or your preferred topping before serving.

Notes

The biscuit base can be customized with different types of plain sweet biscuits if Scotch fingers are unavailable. Ensure the custard is fully set in the fridge before adding the cream topping.
