Ingredients
- 0.8 lb fresh salmon (cubed)
- 1 tbsp olive oil
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp seasoning salt (or fish seasoning)
- 1 tsp italian seasoning
- 1 tsp black pepper
- 0.25 cup white cooking wine
- 2 tbsp butter
- 5 garlic cloves (minced)
- 1 tbsp neutral oil (such as avocado oil)
- 1 shallot (minced)
- 0.25 cup sun-dried tomatoes (chopped)
- 1 tbsp sun-dried tomato oil (from the jar)
- 0.75 cup heavy cream (room temperature; half & half works too)
- fresh parsley (chopped, for garnish)
- 3 lb russet or Yukon gold potatoes
- 0.25 cup salted butter (melted)
- 5 garlic cloves (for mashed potatoes)
- 0.75 cup milk or cream
- salt (to taste)
Steps
- 1
Prepare the potatoes by peeling and cutting them into chunks. Place them in a pot of water with 5 garlic cloves and salt, then boil until tender.
- 2
Drain the potatoes and garlic. Mash them thoroughly with 1/4 cup melted salted butter and 3/4 cup milk or cream until smooth.
- 3
In a bowl, toss the cubed salmon with 1 tbsp olive oil, paprika, garlic powder, seasoning salt, italian seasoning, and black pepper until evenly coated.
- 4
Heat 1 tbsp neutral oil in a large skillet over medium-high heat. Add the salmon cubes and sear until golden brown on all sides, then remove from the pan and set aside.
- 5
In the same skillet, melt 2 tbsp butter. Add the minced shallot and 5 minced garlic cloves, sautéing until fragrant.
- 6
Deglaze the pan with 1/4 cup white cooking wine, scraping up any browned bits from the bottom.
- 7
Stir in the chopped sun-dried tomatoes and 1 tbsp of the sun-dried tomato oil.
- 8
Pour in 3/4 cup heavy cream. Simmer the sauce for a few minutes until it begins to thicken slightly.
- 9
Return the seared salmon to the skillet and toss gently to coat in the sauce.
- 10
Serve the salmon and sauce over the garlic mashed potatoes, garnished with fresh chopped parsley.
Notes
The author suggests that half & half can be used as a substitute for heavy cream in the sauce. Ensure the cream is at room temperature before adding to the sauce to prevent curdling.
