Ingredients

  • 5 Russet potatoes (Large; peeled and diced into big chunks)
  • Salt (For the salted boiling water)
  • 0.5 tsp Black pepper powder
  • 1 tbsp Garlic powder (For the hash browns)
  • 2 tbsp Cornstarch
  • 0.25 cup Parmesan cheese (Freshly grated; mixed into the hash-brown mixture)
  • Water (For partially boiling the potatoes)
  • Oil (For greasing hands and deep-frying)
  • 0.5 cup Mayonnaise (For the sauce)
  • 0.25 cup Ketchup (For the sauce)
  • 1 tbsp Worcestershire sauce (For the sauce)
  • 1 tsp Garlic powder (For the sauce)
  • Salt (For the sauce, to taste)
  • Black pepper (For the sauce, to taste)
  • 1 tsp Dijon mustard (For the sauce)
  • Parmesan cheese (Additional freshly grated Parmesan for sprinkling on top before serving)

Steps

  1. 1

Place the peeled, large-chunked russet potatoes in a saucepan and cover them with salted water.

  2. 2

Partially boil the potatoes until they are about 50% cooked.

  3. 3

Drain the water, then let the potatoes sit in the same saucepan for 10 minutes so that all remaining water evaporates.

  4. 4

Shred the potatoes with a grater and transfer the shreds to a mixing bowl.

  5. 5

Season the shredded potatoes with salt, black pepper powder, and garlic powder.

  6. 6

Add the cornstarch and mix it through the potatoes.

  7. 7

Add the freshly grated Parmesan cheese and mix until everything is combined.

  8. 8

Grease your hands with oil and form the potato mixture into thin oval shapes.

  9. 9

Lay the shaped hash browns flat on a parchment-lined sheet.

  10. 10

Freeze the hash browns for 15 to 20 minutes, until firm.

  11. 11

Combine the mayonnaise, ketchup, Worcestershire sauce, garlic powder, salt, black pepper, and Dijon mustard to make the sauce.

  12. 12

Heat the frying oil to 350°F (175°C).

  13. 13

Deep-fry the hash browns over medium heat for 4 to 6 minutes, working in batches of 2 to 3 at a time.

  14. 14

Flip the hash browns halfway through frying so they cook on both sides.

  15. 15

Before serving, sprinkle additional Parmesan cheese over the hash browns and serve warm with the sauce.

The source does not specify the quantity of frying oil, boiling water, salt, or additional Parmesan used for topping. It also does not state a sauce assembly method; combining the listed sauce ingredients is the minimal connective step. Frying time and temperature are provided by the source.
