Ingredients

  • 500 g Potatoes (Peeled and cut into chunks)
  • 150 g All-purpose flour (Plus extra for shaping if needed)
  • 1 tsp Salt (Or to taste)
  • 200 g Shredded cheese (Mozzarella or another good melting cheese)
  • 2 tbsp Vegetable oil (For cooking the flatbreads)

Steps

    Peel the potatoes, cut them into even chunks, and place them in a saucepan. Cover with water and boil until completely tender and easily pierced with a fork, about 15–20 minutes.

    Drain the potatoes thoroughly and mash them while still hot until smooth. Allow the mash to cool until warm rather than piping hot.

    Add the flour and salt to the mashed potatoes. Mix and knead until a soft, cohesive dough forms. Avoid adding too much flour; the dough should remain tender but workable.

    Divide the dough into four equal portions. Flatten one portion into a round on a lightly floured work surface.

    Place a portion of shredded cheese in the center of the dough. Fold the edges over the cheese and pinch to seal, then gently flatten and roll into a thick flatbread. Repeat with the remaining dough and cheese.

    Heat a little vegetable oil in a skillet over medium heat. Add one filled flatbread and cook for several minutes per side, turning carefully, until golden brown on the outside and the cheese is melted inside.

    Repeat with the remaining flatbreads, adding a little more oil to the skillet as needed. Serve warm while the centers are soft and cheesy.
