Ingredients
- 1 kg chicken thighs (Skin-on thighs are browned until crispy and fully cooked; the paprika is divided between browning and the stew.)
- 400 g chopped tomatoes (1 can)
- 400 g butter beans (1 can)
- 90 g chorizo
- 1 red bell pepper
- fresh spinach (A handful)
- 1 red chilli
- 1 large onion
- 4 garlic cloves
- 1.5 tbsp smoked paprika (Use 1 tsp to brown the chicken and add the remainder to the stew.)
- 1 tbsp thyme (Dried or fresh)
- 1 tbsp olive oil
- 150 ml chicken stock (Stock made from a cube is fine.)
- fresh parsley (A handful, freshly chopped, for garnish)
- salt and pepper (To taste)
- lemon juice (For drizzling at serving)
Steps
- 1
Heat a large pan over medium heat. Brown the chicken thighs with 1 tsp of the smoked paprika for 10–12 minutes, until the skin is crispy and the chicken is fully cooked through. Remove the chicken from the pan and set it aside.
- 2
In the same pan, cook the chorizo until crispy. Remove it from the pan and set it aside.
- 3
Add the onion, garlic, and red chilli to the same pan. Sauté over medium heat for 5–7 minutes, until the onion is soft.
- 4
Add the red bell pepper and sauté for a further 5 minutes, until softened.
- 5
Return the cooked chorizo to the pan. Add the remaining smoked paprika, thyme, salt, and pepper, then stir well.
- 6
Add the chopped tomatoes and chicken stock. Season well and cook for a few more minutes.
- 7
Add the fresh spinach and allow it to wilt down.
- 8
Add the butter beans to the pan.
- 9
Return the chicken thighs to the pan, pushing them under the liquid. Cover the pan with its lid and simmer for 15–20 minutes.
- 10
Serve the stew garnished with freshly chopped parsley and a drizzle of lemon juice.
