Ingredients

  • 250 g Butter
  • 5 g Parsley (Optional; chop or add as demonstrated in the video)
  • Salt (A small amount, to taste)
  • Ice water (For rapidly cooling the brown butter)

Steps

  1. 1

Place the butter in a pan and heat over low heat. Continue heating until the butter turns deep brown and gives off an aroma similar to toasted hazelnuts.

  2. 2

Remove the butter from the heat slightly before it reaches a deep brown color; the residual heat will continue to darken it. Do not cook it for too long, or it may become overly burnt.

  3. 3

Add the parsley to the brown butter; the parsley is optional. If seasoning, add a small amount of salt.

  4. 4

Prepare a bowl of ice water. Place the container holding the brown butter in the ice water to cool it rapidly.

  5. 5

Continue stirring the brown butter as it cools until the brown butter is finished.

  6. 6

Serve the finished brown butter with bread, or use it to roast fish or shrimp.

Notes

The video does not provide a specific heating time, temperature, or amount of ice water. Remove the butter from the heat early when it turns deep brown, because the residual heat will continue to darken it.
