Ingredients
- 600 g Ground beef patties (preferably a short-rib blend, divided into 4 patties of 150g each)
- 8 Cheddar cheese (slices)
- 2 Brioche buns (or burger buns of your choice)
- Butter (for toasting the buns)
- Salt (to taste)
- Black pepper (to taste)
- 2.5 dl Mayonnaise (plain)
- 2 tbsp Dijon mustard
- 1 tsp White wine vinegar
- 1 tsp Worcestershire sauce
- 4 Pork belly bacon (thick-cut)
- Maple syrup (for brushing the bacon)
- 1 Red onion (finely diced)
- 10 g Chives (finely sliced)
- 2 Eggs
- Dill pickles (sliced)
Steps
- 1
To make the Dijonnaise, combine the mayonnaise, Dijon mustard, white wine vinegar, and Worcestershire sauce in a small bowl. Season with salt and black pepper. Set aside until ready to use.
- 2
Cook the thick-cut bacon in a pan or in the oven until almost crisp. Brush generously with maple syrup and continue cooking until glazed and crisp.
- 3
Slice the brioche buns in half and butter the cut sides. Toast them in a pan until golden brown.
- 4
Season the beef patties generously with salt and black pepper. Cook in a hot pan or on the grill to the desired doneness.
- 5
Just before the patties are done, place two slices of Cheddar cheese on each patty and allow the cheese to melt.
- 6
In a separate pan, fry the two eggs sunny-side up.
- 7
To assemble, spread a generous amount of Dijonnaise on the bottom halves of the toasted buns.
- 8
Top the sauce with the diced red onion and chives.
- 9
Stack two cheese-topped patties on each bun.
- 10
Place the maple-glazed bacon and dill pickles on top of the patties.
- 11
Top each burger with a fried egg and place the top bun half on top.
