Ingredients

  • 10 Clementines with stems and leaves (Rinsed; 1 is used for the zest and juice, another for additional juice, and the remaining 8 as cups. Reserve the tops of these 8.)
  • 0.5 limón grande Lemon juice (The recipe calls for the juice of half a large lemon. If the mixture does not thicken slightly after resting, add 1 additional tbsp.)
  • 500 ml Heavy cream (Heavy cream.)
  • 120 g Sugar
  • 0.25 tsp Salt

Steps

  1. 1

Zest 1 clementine over a small bowl. Cut it in half and squeeze its juice into the same bowl.

  2. 2

Squeeze another clementine to obtain 75 ml of juice in total, approximately the juice of 2 clementines. Add the lemon juice and mix the juices.

  3. 3

Cut off the top third of the remaining 8 clementines. Store these lids in the refrigerator.

  4. 4

Using a small spoon, carefully remove the pulp from the bottom halves of the 8 clementines, forming hollow cups. Place them on a baking sheet and set them aside in the refrigerator.

  5. 5

In a medium saucepan, combine the cream, sugar, and salt.

  6. 6

Heat the mixture over medium heat for 3 minutes, stirring constantly to prevent it from coming to a boil.

  7. 7

Remove the saucepan from the heat and add the citrus juices and zest. Stir to combine.

  8. 8

Cover the mixture and let it rest undisturbed for 10 minutes. It should thicken slightly. If it has not thickened, stir in 1 additional tbsp lemon juice.

  9. 9

Strain the mixture into a large measuring jug with a spout.

  10. 10

Fill the clementine cups and distribute the posset mixture evenly among them. Use a toothpick to remove any air bubbles from the surface.

  11. 11

Cover the cups with plastic wrap and refrigerate them for at least 4 hours; preferably leave them overnight, until the posset has set.

Notes

The recipe does not specify an exact heat setting, only medium heat, and states that the cream should not boil. The clementine lids are reserved to cover the cups again when serving, although the final assembly is not explicitly detailed.
