Ingredients

  • 240 g Yellow mustard (Use plain yellow mustard, not Dijon.)
  • 90 g Apple cider vinegar
  • 60 g Honey
  • 35 g Brown sugar (Packed.)
  • 30 g Ketchup
  • 15 g Worcestershire sauce
  • 10 g Hot sauce
  • 3 g Garlic powder
  • 3 g Onion powder
  • 2 g Smoked paprika
  • 2 g Black pepper
  • 0.5 g Cayenne pepper
  • 2 g Kosher salt (Diamond Crystal; adjust to taste.)
  • 28 g Butter (Add off the heat.)

Steps

  1. 1

In a saucepan, combine the yellow mustard, apple cider vinegar, honey, brown sugar, ketchup, Worcestershire sauce, hot sauce, garlic powder, onion powder, smoked paprika, black pepper, cayenne pepper, and kosher salt. Whisk until smooth.

  2. 2

Set the saucepan over medium heat and bring the sauce to a simmer. Simmer for 8–10 minutes, whisking, until smooth and heated through. If it begins bubbling or splattering vigorously, lower the heat.

  3. 3

Remove the saucepan from the heat. Add the butter and whisk it in until melted and the sauce is glossy.

  4. 4

Brush the sauce onto meat near the end of cooking, or serve it on the side. Avoid brushing it on too early over direct heat because the sugar can burn.

Notes

Makes about 420 g (1 3/4 cups). Keeps refrigerated for 2 weeks. The source gives 1/3 tsp for 2 g Diamond Crystal kosher salt; adjust as desired.
