Ingredients

  • 2 tbsp olive oil
  • 1 small yellow onion
  • 2 red bell peppers (chopped)
  • 1 tsp dried basil
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 2 tsp salt
  • 0.25 tsp pepper
  • 1 sweet potato (cubed)
  • 1 pint cherry tomatoes
  • 32 oz vegetable broth
  • 0.5 cup coconut cream (plus more for garnish)
  • crusty bread (good crusty bread, for serving; quantity not specified)
  • parsley (for garnish; quantity not specified)

Steps

  1. 1

Heat the olive oil in a soup pot. Add the onion and chopped bell peppers and sauté for 5–9 minutes, until tender.

  2. 2

Add the cherry tomatoes and the dried basil, thyme, oregano, garlic powder, salt, and pepper. Sauté for a few more minutes.

  3. 3

Add the cubed sweet potato to the pot.

  4. 4

Pour in the vegetable broth and bring the soup to a boil.

  5. 5

Cook over medium-high heat for 10 minutes, until the sweet potato is tender.

  6. 6

Add the coconut cream, then turn off the heat.

  7. 7

Blend the soup with an immersion blender, or transfer it carefully to a stand blender and blend. Leave some texture if desired.

  8. 8

Garnish with pepper, parsley, and more coconut cream.

  9. 9

    Serve with crusty bread.

Notes

The post advertises this as a 20-minute soup, but its stated sautéing and simmering times total at least 15–19 minutes, not including preparation or blending. Garnish amounts and the amount of bread are not specified.
