Ingredients
- 2 tbsp instant coffee
- 2 tbsp granulated sugar
- 2 tbsp hot water
- 1 tsp pitaya powder (dragon fruit powder)
- ice cubes (enough to fill glass)
- 1 cup milk (dairy or plant-based)
Steps
- 1
In a medium mixing bowl, combine 2 tablespoons of instant coffee, 2 tablespoons of granulated sugar, and 2 tablespoons of hot water.
- 2
Add 1 teaspoon of pitaya (dragon fruit) powder to the bowl for color and flavor.
- 3
Using a hand mixer or a whisk, beat the mixture vigorously until it becomes thick, frothy, and holds stiff peaks.
- 4
Fill a serving glass with ice cubes.
- 5
Pour your choice of milk into the glass, leaving about two inches of space at the top.
- 6
Dollop the whipped pink coffee mixture onto the top of the milk.
- 7
Stir gently before drinking to combine the layers.
Notes
For the best results, ensure the water is very hot to help dissolve the coffee and sugar quickly. You can adjust the amount of pitaya powder to achieve your desired shade of pink.
