Ingredients
- 1 tbsp vegetable oil (For sautéing)
- 1 lb ground beef
- 1 cup onion (Diced)
- 3 cloves garlic (Minced)
- 0.5 tsp salt
- 0.25 tsp ground black pepper
- 1 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 0.5 tsp thyme
- 1 cup beef broth
- 2 cups frozen peas and carrots
- 3 medium potatoes (Peeled)
- 0.5 cup half-and-half
- 2 tbsp butter (Margarine may be substituted if preferred)
- 0.25 tsp garlic salt
Steps
- 1
Turn on a multi-functional pressure cooker, such as an Instant Pot, and select the Sauté function. Heat the vegetable oil in the pot.
- 2
Add the ground beef, diced onion, minced garlic, salt, and black pepper. Cook and stir in the hot oil until the beef is browned and crumbly and the onion is soft and translucent, about 5 minutes.
- 3
Stir in the tomato paste, Worcestershire sauce, and thyme.
- 4
Pour in the beef broth and stir in the frozen peas and carrots until well blended. Turn off the Sauté function.
- 5
Place the collapsible metal trivet in the pot so it rests just above the meat-and-vegetable mixture. Place the peeled potatoes on the trivet.
- 6
Close and lock the lid. Select high pressure according to the manufacturer's instructions. Set the timer for 15 minutes if the potatoes are on the smaller side, or 20 minutes if they are medium or large. Allow 10 to 15 minutes for pressure to build.
- 7
When pressure cooking is complete, allow a natural pressure release for 10 minutes according to the manufacturer's instructions. Carefully release the remaining pressure using the quick-release method, which should take about 5 minutes.
- 8
Open the lid and transfer the potatoes to a bowl. Turn off the Instant Pot and carefully remove the hot trivet.
- 9
Add the half-and-half, butter, and garlic salt to the potatoes. Mash until well blended and creamy.
- 10
Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- 11
Pour the meat-and-vegetable mixture from the Instant Pot into an 8-inch square baking dish.
- 12
Spoon the mashed potatoes over the filling and spread them evenly across the top.
- 13
Broil in the preheated oven until the potato topping starts to turn golden brown, about 3 minutes.
Notes
The recipe yields one 8-inch square dish and serves 6. Follow the pressure cooker's manufacturer instructions for high pressure, natural release, and quick release. Take care when removing the hot trivet and releasing pressure.
