Ingredients
- 400 g Cottage cheese (1 container)
- 3 Eggs (whole)
- 0.5 tsp Salt
- 0.5 tsp Pepper
- 1 tsp Pizza seasoning (can be swapped for other spices)
- 2 tsp Olive oil (for greasing the parchment paper)
Steps
- 1
Preheat your oven to 170°C (340°F) using the fan/convection setting.
- 2
Find a blender or immersion blender and add 400 grams of cottage cheese along with 3 whole eggs.
- 3
Add salt, pepper, and pizza seasoning (or other spices of your choice) to the blender.
- 4
Run the blender until the mixture has become completely smooth.
- 5
Prepare a baking sheet (preferably one with small holes) and line it with parchment paper.
- 6
Grease the parchment paper with a little olive oil to prevent the wrap from sticking.
- 7
Pour the batter onto the prepared baking sheet and distribute it into a thin, even layer.
- 8
Tap the baking sheet against the counter a few times to level the batter and remove any air bubbles.
- 9
Place the tray in the middle of the preheated oven and bake for 25-30 minutes. Turn the tray halfway through the cooking time for even browning.
- 10
Once baked, remove from the oven and let it cool slightly before adding your desired fillings.
- 11
Fill the wrap with your choice of ingredients (e.g., pesto, salad, tomato, chicken, parmesan, and balsamic), roll it up, and cut in half to serve.
Notes
The author recommends filling the wrap with pesto, salad, tomato, natural chicken, parmesan, and balsamic glaze. Baking time may vary depending on the thickness of the batter and oven quality.
