Ingredients
- 1 Potato (sliced very thin with a vegetable slicer)
- 2 Eggs
- 3 tbsp Cream cheese (a generous layer)
- Parsley (to taste, chopped)
- Green onion (to taste, chopped)
- 1 tbsp Olive oil (for greasing the pan)
- Salt (to taste)
- Paprika (to taste)
Steps
- 1
Slice the potato into very thin slices using a vegetable slicer or mandoline.
- 2
Grease a frying pan with olive oil and arrange the potato slices in an even layer across the bottom.
- 3
Fry until a golden crust forms on the bottom, then carefully flip the entire potato layer over.
- 4
Add salt and paprika to the potatoes to taste.
- 5
Crack the eggs onto the top of the potatoes and distribute them evenly across the surface using a fork.
- 6
Once the eggs have set slightly, add a generous layer of cream cheese over the top.
- 7
Sprinkle with chopped parsley and green onions if desired.
- 8
Allow the cheese to melt, then fold one side over the other to create a closed, half-moon shaped flatbread.
- 9
Slice and serve while the cheese is still hot and stretchy.
Notes
For best results, ensure the potato slices are paper-thin so they cook through and form a cohesive base. You can substitute the cream cheese with mozzarella if you prefer a more traditional 'cheese pull'.
