Ingredients

  • 0.25 loaf White bread (A quarter loaf, hollowed out to create a cavity for stuffing)
  • 3 tbsp Atchar mayonnaise (Divided; a mixture of mango atchar and mayonnaise)
  • 0.5 cup Cheddar cheese (Grated and divided; used for multiple layers)
  • 1 cup Potato chips (Freshly fried potato fries (slap chips))
  • 2 tbsp Mango atchar (Additional atchar for layering)
  • 1 Russian sausage (Cooked and sliced)
  • 1 Egg (Fried)
  • Chili flakes (To taste, for garnish)

Steps

    Prepare the bread by cutting a quarter section from a fresh white loaf and hollowing out the center, leaving the bottom and sides intact to form a bowl.

    Spread a generous layer of atchar mayonnaise into the bottom of the hollowed-out bread.

    Add a layer of grated cheese over the mayonnaise.

    Fill the cavity with freshly fried potato chips (fries).

    Add a layer of mango atchar and another layer of grated cheese. If desired, use a blowtorch to melt the cheese until bubbly.

    Place the cooked Russian sausage (sliced or whole) into the bread.

    Top with more atchar mayonnaise and another layer of cheese.

    Place a freshly fried egg on top of the assembly.

    Finish with a sprinkle of chili flakes and serve immediately.

Notes

The 'Russian' is a specific type of spicy, smoked sausage common in South Africa. Atchar mayonnaise can be made by blending or stirring together mango atchar and plain mayonnaise. This dish is traditionally eaten by hand and is known for being very filling.
