Ingredients

  • 1 Butternut squash (large; peeled, seeded, and cut into thick fries)
  • 4 tbsp Olive oil
  • Salt (2 pinches)
  • 1 tbsp Smoked paprika (For the fries)
  • 1 tbsp Oregano
  • 1 tbsp Onion powder (For the fries)
  • Grated Parmesan (Freshly grated; quantity unspecified. A little extra on top, if desired.)
  • 4 tbsp Thick Greek yogurt (Or heavy cream / sour cream)
  • 2 tbsp Mayonnaise
  • 1 tsp Smoked paprika (For the sauce)
  • 1 tsp Onion powder (For the sauce)
  • Salt (To taste, for the sauce)
  • Pepper (To taste, for the sauce)
  • 0.5 Lime (Juice of half a lime)
  • Fresh chives (Quantity unspecified)

Steps

  1. 1

Cut the butternut squash in half, remove the seeds, and peel it.

  2. 2

Cut the squash into fairly thick fries, like potato wedges.

  3. 3

In a large bowl, mix the olive oil, two pinches of salt, smoked paprika, oregano, and onion powder.

  4. 4

Add the butternut sticks to the bowl and mix carefully to coat them evenly with the marinade.

  5. 5

Place the freshly grated Parmesan in another bowl. Dip each fry into the cheese to coat both sides.

  6. 6

Arrange the fries on a baking sheet lined with parchment paper. Bake them at 200 °C for 20 to 30 minutes.

  7. 7

After 20 minutes, turn the fries over. Add a little Parmesan on top, if desired, then return them to the oven for 3 to 4 minutes to brown.

  8. 8

While the fries are cooking, mix the Greek yogurt (or heavy cream / sour cream), mayonnaise, smoked paprika, onion powder, salt, pepper, lime juice, and fresh chives in a bowl.

  9. 9

Taste the sauce and adjust the seasoning to your liking.

  10. 10

Serve the butternut squash potatoes hot and crispy with the sauce.

Notes

The quantities of Parmesan and chives are unspecified. The text indicates a cooking time of 20 to 30 minutes, followed by turning the fries after 20 minutes and cooking for an additional 3 to 4 minutes to brown them; the timing is therefore approximate.
